Cooking Instructions

Dice onion and add to pot with olive oil. Season with thyme. Add mushrooms and season with salt and pepper

Add 1 cup of rice. Let cook for a minute. Add the wine first and stir. Once the liquid is absorbed add one ladle of stock and stir.

When the rice is al dente grate cheese and stir into mixture. You can add one more ladle of stock and then season with parsley
