Ingredients

  1. 3eggs
  2. 1/2 cupvegetable oil
  3. 3/4 cupapplesauce
  4. 3/4 cupbrown sugar
  5. 3/4 cupsugar
  6. 2 tsp.vanilla extract
  7. 2 1/2 cupsflour
  8. 1/4 tsp.baking powder
  9. 2 tsp.baking soda
  10. 1 1/2 tsp.cinnamon
  11. 1/2 tsp.nutmeg
  12. 1/2 tsp.salt
  13. 2 cupsshredded zucchini
  14. Cream Cheese Frosting:
  15. 1 (8 oz.)cream cheese, room temperature
  16. 1/4 cupsoftened butter
  17. 3 cupspowdered sugar
  18. 1 tsp.vanilla extract
  19. 1/2 cupchopped walnuts, if desired

Cooking Instructions

    Preheat oven to 350 degrees. To a large bowl add eggs, oil, applesauce, sugars and vanilla extract. Mix well.

    Add baking powder, baking soda, cinnamon, nutmeg and salt; mix well.

  3. 3

    Add zucchini.

  4. 4

    Lastly add flour mixing until thoroughly combined.

  5. 5

    Place mixture into greased 9x13 baking dish and bake for 30 to 35 minutes or until a toothpick inserted into the middle comes out clean.

    Allow cake to completely cool before making the frosting. When ready, combine all frosting ingredients in a small bowl.

    Spread evenly over cake. Top with walnuts if desired.
