Ingredients

  1. 1 cupButter
  2. 3/4 cupFlour
  3. 1 cupCaster sugar
  4. 4Eggs
  5. 1 1/2 tspBaking powder
  6. 1 tbspVanilla essence
  7. Ingredients for icing
  8. 1/2 cupButter
  9. 1/2 cupGranulated sugar
  10. 2Eggs beaten
  11. 1tbspInstant coffee dissolve in 1tbsp water

Cooking Instructions

    Beat butter and sugar till light and creamy,add in 1 egg at a time,continue to beat well,alternatively with sieved flour and baking powder, till all eggs have been added.

    Lastly fold in the remaining flour and vanilla essence, fold with lightly hands, spread mixture in a well greased 9 inch round pan and bake on 180°C for 40 to 45 minutes.

    Method for icing: Cook the butter and sugar on low flame, stirring continuously till butter melts.

    Remove and cool completely, add in beaten eggs, cook stirring on very low flame continuously, till sugar melts and it looks like solid ghee.

    Remove and cool once again in the fridge, the mixture will look like a frozen ghee, beat well with beater until light and fluffy, add dissolved coffee beat well and use for icing the cake.☺

    Remove cake from tin, cool cake cut from center and spread with prepared icing, sandwich the 2nd piece on top, cover the whole cake with icing.
