Pesto pasta with Cashew

Generally pesto pasta is made with spaghetti pasta but I make with Penne or Fusilli as its readily available and when I don't have the pine nuts ( the costliest nut in the world ) I use cashew nuts and customize it as per my taste buds. Thank God Fresh Italian Basil is readily available nowadays.

Ingredients

1-1:30 hours
2-3 servings
  1. 160 gmsPasta
  2. 2chicken breast (skip it if vegetarian)
  3. 7-8Garlic cloves chopped
  4. as neededFew Basil leaves chopped
  5. as required Few Cherry tomatoes or one big tomato cut into chunky pieces
  6. As neededLittle Butter and olive oil
  7. For the Pesto
  8. 2 cupsFresh Italian basil
  9. Handfulcashew (if you have pine nuts use that)
  10. as per taste Salt
  11. 2/3 cupsOlive oil
  12. 10-15Garlic cloves
  13. 1 tspCrushed Black pepper
  14. 1-2 tbspsParmesan cheese or any cheese readily available

Cooking Instructions

    Prepare all the ingredients and boil the pasta as per instruction, keep it al dente, reserve the boiled pasta water for cooking purpose.Cut the chicken breast into strips. Make a paste with the ingredients listed for Pesto. With 2 tbsps of pesto marinate the chicken for half an hour at least.

    Heat little butter and oil together in a pan, to give an extra flavour..saute the Chopped garlic and little Chopped basil, saute the tomatoes also along with garlic and basil and take it out & add it while doing platting. After taking out the tomatoes add the marinated chicken breast strips and cooked for sometimes- add the pasta water when required.

    Once the chicken gets cooked add the pesto and then add the Boiled pasta n adjust salt...don't cook too much now. Put the flame off n plate it & garnish with sauteed tomato, fresh basil n more cheese. Bon Appetite!!!
