Cooking Instructions
- 1
Roughly chop the onion into smaller pieces. Fry the onion on low heat in a pot with oil. Roughly chop the green pepper into smaller pieces. Once onions are translucent, add the chopped green pepper.
- 2
Cut the chilli lengthwise. Remove the seeds. Chop finely and add to the onion mixture. Cut the tomato into smaller cubes. Add to the onion mixture. Cook for 10 minutes on medium heat with the lid on.
- 3
Chop the fresh parsley finely and add ONLY HALF OF THE PARSLEY to the mixture (Keep the rest to add when served). Chop the mushrooms into quarters. Add to the onion mixture. Fry for 5 minutes.
- 4
Add the stock (I used mushroom stock). Reduce until it is thick. About 15 minutes.
- 5
Make two holes in the sauce with a wooden spoon. Crack the eggs and gently add into the holes. Lower the heat and let cook with the lid on. Season with salt and pepper.

Stuffed Frittata with Wild Asparagus and Tropea Red Onions Stuffed Frittata with Wild Asparagus and Tropea Red Onions
I've often heard people say dismissively, "They can't cook at all—they can't even make a frittata!" as if making a frittata in a skillet is the easiest thing to cook. That's not true; making a frittata, especially with lots of eggs and a good filling, isn't that simple. A few days ago, my father brought me plenty of wild asparagus, beautiful Tropea onions, and the freshest eggs. I immediately thought to use these spring delicacies to make a big frittata. I think it's a perfect main dish for an Easter Monday lunch. Maria Grazia Trocini
