My Chicken and Mango in Sweet 'n' Sour Sauce 😚

My sauce is darker because I only had red wine vinegar. But it tastes much the same. You can add more or less to your sauce as you cook to your own taste. I used Mango, s instead of pineapples they taste better.

My sauce is darker because I only had red wine vinegar. But it tastes much the same. You can add more or less to your sauce as you cook to your own taste. I used Mango, s instead of pineapples they taste better.
Cooking Instructions

Add a little oil to a pan and fry the chicken until cooked on medium so it does not brown too much. When cooked add the onions toss it all around for 2 minutes on medium heat. Just fry until the onions are opaque in colour.

Turn the chicken and onion off and set aside.

To make the Sauce...... add the Tomato ketchup to a saucepan. Then the Soy Sauce

Next add the brown sugar and then the rice vinegar next add the pineapple juice.

Add to the heat and stir to mix and stir continuously until boiling.then add to the chicken and onion. Stir bring to the boil then turn heat down and simmer for 5 minutes.

Next add the mango and sweet pepper stir and serve with Rice or Chips.

Green bell peppers and eggplant were in season this summer and autumn in my garden!I added some chicken breast that was on sale for around 100 yen ($1) to make dinner!It looks like sweet and sour pork so I cooked it using a similar sauce. It'll taste better when cooled if you use just a small bit of sauce. It's delicious in bento, too!-It's nice even without doubanjiang spicy bean paste!-Substitute chili oil or ichimi togarashi (japanese red chilli pepper) for the doubanjiang spicy bean paste.-Adding extra bamboo shoot, carrot, onion and shiitake mushrooms would be perfect. Like sweet and sour pork!-Do not stir fry the bell peppers too long or they'll lose their crunchiness.-Reduce the sauce at the end so that ketchup and vinegar are less acidic. I wanted to eat tofu in a different way than I usually do, so I thought this up. I mixed my favorite ketchup with vinegar, and was able to come up with this mild sweet and sour ketchup sauce.1) When not using honey for the sauce, a tablespoon of sugar should suffice.2) Make sure to thoroughly drain the tofu. If you want to sweeten it, add sugar in 1/2 tablespoon intervals to taste. When you mix in the water, this is useful because the water from the tofu will drain out and mix with the ankake.3) I used a small 200g package of firm tofu.
