One of the winter favourites with the Notun Patali Gur ( new palm jaggery ) but this time I made it with Brown sugar as it was lying around for a long time, so thought of finishing that before my order of Patali Gur arrives from Kolkata, then I will make with that too😀 till then let me relish this.

Cooking Instructions

Dry roast the puffed rice/ murai / muri / murmure / mamra for 1-2 minutes just to make it crispy incase if it has gone soggy. Keep a bowl of room temperature water ready.

Now on low flame start melting the brown sugar...after 4-5 minutes it will start melting..in about 10 minutes it will completely melt... frequently stir it carefully so that it doesn't burn.

Now add the puffed rice and mix well. Put off the flame (You can put off the flame in between while you are adding the puffed rice). While it's still hot form small ladoos or balls of it by wetting both your palm with water.

First wet your palm and then take a small portion of the brown sugar (or Gur) & puffed rice mixture press between your palms and form laddoos...and keep it on a ghee greased plate or butterpaper. Be careful because mixture will be quite hot. Once cooled it will be difficult to work so you have to form laddoos while it is still hot....I keep it on the stove only (with flame off) so that the hot burner still gives the warmth to it and form the Laddoos as quick as possible.
