Ingredients

4 servings
  1. 2good sized potatoes
  2. 1leek
  3. 50 gchopped smoked scamorza cheese - optional, my Italian twist
  4. Enough hot stock to cover the potatoes
  5. 1 slicebread
  6. Few rashers of streaky bacon
  7. Salt to taste
  8. Knobbutter

Cooking Instructions

    Preheat oven to 200. Chop leek. Peel and slice potatoes thinly. Heat butter in a pan and soften the leeks

    In a small rectangular tray, layer up potatoes, leeks and cheese. Season each layer

  3. 3

    When you have finished all ingredients, add stock, just enough to cover the potatoes. Pop in the oven for about 40 mins. Meanwhile, in the same pan as you cooked the leeks, add some chopped bacon. Fry until crisp, then break up the bread and add to the bacon

    Cook for a few minutes until browned, set a side. After 40 mins, test the potatoes with a cocktail stick, they should be soft. Now add the bacon crumb on top and pop back in the oven for another 10 mins. Leave to rest for 10 mins before serving
