Tamale Red Sauce (or Enchilada Sauce)

UPDATED: This is an authentic Mexican Red Tamale sauce that I also use on enchiladas. It is very rich and only medium spicy but packs a lot of flavor into your Mexican dish. #mymexican

Cooking Instructions
- 1
Start by seeding the dried peppers and tearing them in to 1 to 2 inch pieces. Quarter or section your tomatoes.
- 2
In a medium fry pan or large sauce pan, combine peppers, tomatoes, garlic, and dried minced onion with 2 cups of the chicken stock. Bring to a boil, reduce heat to low and simmer for 30 minutes.
- 3
Place peppers and tomato mix (including liquid) into a blender and blend until smooth.
- 4
Pour back into the sauce pan along with the additional 1 cup of chicken stock, cumin and salt and bring back to a simmer for 10 more minutes, stirring every two or three minutes.
- 5
Remove from heat, stir, and let cool for five minutes before handling. ENJOY!

Enchilada Sauce - Red Chile Sauce Enchilada Sauce - Red Chile Sauce
This sauce is far better than any canned variety and it will make enough for two large meals! Use this recipe to make red enchiladas, smothered burritos, soups, stews and more! Make certain that you don't wear your good clothes because the process can get a bit messy.I prefer to make my sauce the day before for several reasons. It is one less thing to prepare the day of and if you allow the sauce time in the refrigerator, it will get thicker. This sauce is not the typical "gringo" flour-based sauce, so allowing it time to get thicker really helps the sauce adhere well. If you do make the sauce ahead, you may notice that it appears gelatinous; mix well before using. Izandro -

Baked Chiles Relleno w/Tortilla Enchilada Sauce Baked Chiles Relleno w/Tortilla Enchilada Sauce
This is a very loose interpretation of chiles relleno, but it has authentic ingredients and flavors. I had all of it lying around and threw it together. I wasn't planning to make it a tortilla enchilada sauce, but it was thinner than I wanted. I added the chips to thicken it and it ended up giving it a pretty toasty flavor. hands.matt
