Ingredients

  1. Chicken
  2. Kerisik/ Ground fried coconut (50g)
  3. 3shallots *
  4. 1 stalklemongrass (white part)*
  5. 4 clovesgarlic*
  6. 1 inchginger*
  7. 1/2 inchgalangal*
  8. 5dried chillies soaked*
  9. 1 cupcoconut milk
  10. 1cinnamon stick
  11. 4cardamoms
  12. 3cloves
  13. 1bruised lemongrass
  14. 3star anise

Cooking Instructions

    Blend ingredients with (*)

    With a 1½cup of oil, fry blended paste

  3. 3

    Add the spices, including the bruised lemongrass. Fry till the oil "breaks"

  4. 4

    Add in the kerisik / ground fried coconut. Continue frying for 5-7 more mins

  5. 5

    Add in your chicken pieces

  6. 6

    After frying for 5-7 mins, reduce your flame to low, (from medium heat peeviously) and cook for 20mins at least. Meat will be tender and the dish will be aromatic! Enjoy!
