Ingredients

  1. 3large free range eggs
  2. Handfulbaby leaf spinach
  3. 2baby Portobello mushrooms
  4. Olive oil spray
  5. 1 tbspcreme fraîche
  6. Sunflower oil to cook the scrambled eggs

Cooking Instructions

    Slice the baby Portobello mushrooms

    In a small frying pan spray the olive oil a couple will do. Fry the mushrooms on low heat. Then add the spinach leaves.

    In a wok with a bit of oil. Scramble the eggs. Remove from heat. Add creme fraîche. Then add the spinach, mushrooms and mix
