I learned this recipe from The Pasta Queen. She only made it with mint but if I have basil in the fridge, why would I keep it out of the pesto party?

I learned this recipe from The Pasta Queen. She only made it with mint but if I have basil in the fridge, why would I keep it out of the pesto party?

Ingredients

  1. Bunchmint
  2. Few leaves basil
  3. Handfulpecorino cheese, grated
  4. Handfulpistachio
  5. 2garlic cloves
  6. Drizzle of extra virgin olive oil
  7. Halflemon juice
  8. Salt to taste

Cooking Instructions

    Mix all the ingredients together except for the salt and blitz using a hand blender until smooth. (I didn’t add salt at this step as it’s easier to add and taste after it’s smooth)

    Add salt. Taste. Add more salt. If you’re not consuming the pesto directly, put it in a jar, and add another drizzle of olive oil on top so you can keep it in the fridge for ~2 weeks.
