Delicious Apple Pie

Everyone at home expects my apple pie for Thanksgiving or Thanksgiving dinner. Apple pie in the US is a somewhat tart apple pie served with whipped cream or ice cream. The pastry or dough that is used is the lower and upper double crust (Double-Crust Apple Pie) or a woven network of pieces of crossed pastry, the dough has a flaky texture and its filling is pieces of apples. The type of apple used are Granny Smith, Golden Delicious, and / or Braeburn apples, which are crisp and sour; and it must be fresh, not canned or pureed.

Cooking Instructions

To make the dough: Sift the flour with the sugar and salt, make a hole in the center and add the cold butter, with two knives make a grainy dough until the butter is well integrated, add the white and make the dough, it should be firm.

Let it rest in the freezer for 30 minutes before stretching, while preparing the filling and preheating the oven to 400ºF or 200ºC (you can also make the granules in a kitchen processor)

In a large bowl combine the sugar with the cornstarch, cinnamon, nutmeg and salt, mix and add the apples in wedges with the lemon juice.

Flour a surface, remove the dough from the freezer and stretch, cover a 9-inch or 23 cm high mold previously greased and floured, and line the side walls as well.

Gently press the dough to the bottom and sides, cut the remnants leaving 1 inch or 2.5 cm hanging out of the pan. Add the filling and cover with a moistened pastry disk around the edges and make a small hole in the center for the steam to escape.

Make a border with the pastry that hangs out of the mold and paint with a kitchen brush with egg white, cut out the dough remnants and decorate the surface of the apple pie.

Sprinkle the cake with a mixture of sugar and cinnamon and bake at 350ºF or 180ºC for 50 to 60 minutes (depending on the oven) or until the dough is cooked and golden. Serve warm with whipped cream or ice cream.

I'm not very good at using normal flaky pastry and the apples get soggy, so I always bake the apples first and make the pie like this.If the pastry becomes too soft while carrying out these steps then please continue doing them while chilling the pastry in the fridge. The amount of apples you will need will change according to the size of the pie and apples. This pie isn't so sweet, so please adjust the sugar amount to make it sweeter if you wish.
