Ingredients

  1. Polenta base
  2. 150 gpolenta
  3. 400 mlsveg stock
  4. 1large sweet potato, small diced
  5. 2 tbspolive oil
  6. Salt and pepper
  7. Tomato topping
  8. 250 gcherry tomatoes
  9. 1 tbspolive oil
  10. 2 clovesgarlic, crushed
  11. Salt and pepper
  12. Parsley dressing
  13. 15 gflat leaf parsley
  14. 1large lemon, juiced
  15. 1 tspchilli flakes
  16. 2 tbspolive oil

Cooking Instructions

55 minutes

    Mix together the polenta with the stock and oil, then stir in the sweet potatoes and seasoning.

    Line a baking dish with parchment paper and pour the polenta into the base.

    Bake at 190 C for 40 minutes.

  4. 4

    Stir together the tomato topping. At 40 minutes pour the tomatoes over the top and spread out. Bake for another 15 minutes.

    When the polenta is crisp and the tomatoes are softening, drizzle with the parsley dressing and serve.
