Baked rice is a great alternative to risotto. It is also a very flexible recipe, you may omit the meat and replace with some veggies.

Baked rice is a great alternative to risotto. It is also a very flexible recipe, you may omit the meat and replace with some veggies.

Chop the onions and the pepper and throw in a large pan once the oil is heated. (I use a pan that goes into the oven as the dish is going to bake.) In the meantime preheat the oven to 350°F/ 180°C.

Once the onions have started to cook add the minced meat. Stir it a few times to make sure it cooks evenly. Add the oregano and pepper.

Next add the rice.

Then add the tomato puree or paste and the chopped fresh parsley.

Lastly add the stock or water and desired amount of salt. Give it a stir and place in the oven for about 20-25 minutes.

It is done when it gets a nice brown color. You may serve it as a main dish with some salad or yogurt on the side or use it as a side dish. Hope you enjoy!
