What more can I say? It’s curried lentils. It doesn’t get better than this.
Cooking Instructions

On medium heat fry onion, the garlic and the spices and curry leaves till fragrant. Add tomatoes and cook for 5 minutes.

Add lentils then add saffron water and vegetable stock and cover and cook for 40 minutes, Stirring occasionally. Add coconut cream and cook for either 10 minutes. Add salt and pepper to taste and enjoy.

What inspired me to make this lentil curry is the fact that my mom never ever makes brown lentils which I love, because she complains about the long cooking time and all the gas it has haha and also she makes food super fast like 10-20 minutes (I'm not even lying). I decided to give my mom, who is a mother of 6 a rest for the day and cook up something wholesome for our family. Everybody loves lentils but nobody ever dared to make it in our home😂 lucky I did and it turned out pretty delicious! Served with fried potatoes, flatbread, and chicken meatballs. Almost 24 hours later and they're still raving about the food so it was definitely a hit!!Bushra Adams
