One Pot Rice Cooker Salmon Rice

Ingredients

  1. Rice of Choice
  2. 300 gSalmon Fillet
  3. Dashi Stock (One cup)
  4. Mirin
  5. Miso Paste
  6. Soy Sauce
  7. Minced Garlic
  8. Spring Onions
  9. (Optional) Leafy Greens
  10. (Optional Baby Corn)

Cooking Instructions

    Boil dashi stock according to packet instructions, and set aside.

    Mix one tbsp Miso paste, one tbsp minced garlic, two tbsp mirin and one/two tbsp soy sauce in a bowl. Mix until you get a paste.

    Wash rice and put into pot, cover with dashi stock like you usually would with regular water when cooking rice.

    Prepare the salmon - debone if necessary. Place salmon skin side down on rice with dashi stock. Pour over the paste from step 2, evenly on salmon flesh. It’s okay if this seeps into the water.

    If you are cooking this with any corn/vegetables, throw them in at this step as well.

  6. 6

    Place everything in the rice cooker and let cook at normal rice setting. If salmon is not fully cooked, add water and run the rice setting one more time.

  7. 7

    Flake and mix cooked salmon with rice, serve with spring onions.
