Cooking Instructions

Wash and soak riceand urad dal for nerly an hour.

Wash and rinse the ridge gourd/sponge gourd peels.

In a mixer jar add peels, curry leaves, green chiles, fresh coriander and ginger.

Drain water from the soaked rice and dal and add it into the grinder. Add salt and half cup water.

Grind to a smooth paste.

Pour it in a vessel and mix well. The batter should be slightly thick and not runny.

Heat an cast iron tawa or a nonstick tawa. Pour a ladle ful of this batter in the center and make dosa. Heat it on a medium low flame until crisp. Add some vegetables if desired. I added grated carrots.

Serve hot with any chutney and sambhar. Enjoy!
