Ingredients

  1. 3 cupsrice of any kind
  2. 1 cupurad dal (split black gram)
  3. 4 tablespoonschana dal or flattened rice (poha)
  4. 1/2 teaspoonfenugreek seeds
  5. Salt to taste
  6. For the potato masala:
  7. 750 gramspotatoes
  8. 1/2 cupchopped cilantro
  9. 2green chilies
  10. 1 pieceginger
  11. 2onions, finely chopped
  12. 2 teaspoonsmustard seeds
  13. 1 teaspoonred chili powder
  14. 1 teaspooncumin powder
  15. 1 teaspoonturmeric powder
  16. as neededMustard oil
  17. 1/2 teaspoongaram masala
  18. 2 teaspoonsginger-garlic paste

    Soak the rice, urad dal, fenugreek seeds, and chana dal in water for 5 to 6 hours. Then grind them in a blender to make a batter.

    For the dosa filling, boil and mash the potatoes. Mix in salt and turmeric. Heat mustard oil in a pan, add mustard seeds, asafoetida, chopped cilantro, and curry leaves, and sauté the onions on low heat.

    Add the potatoes, mix all the spices, and add the garlic paste. Sauté well.

    Add salt and water as needed to the dosa batter. Heat a griddle on high flame, lightly grease it with refined oil, and spread the batter gently with your hands.

    Once one side is cooked, add the potato masala and fold the dosa.
