Ingredients

  1. Pastry:
  2. 2 cupsplain flour
  3. 1/2 teaspoonsalt
  4. 2 tablespoonbutter
  5. 6-8 tablespooncold water
  6. Filling:
  7. 1/2 cupsugar
  8. 1 teaspooncinnamon
  9. Pinchsalt
  10. 1/8 teaspoonnutmeg
  11. 3-4cox’s apple or cooking apple
  12. 2 tablespoonbutter
  13. 1/4 cupflour

Cooking Instructions

    In a pan add butter and let it melt. Add in flour and mix well. Add in sugar, cinnamon, nutmeg and 1/8 teaspoon salt and apples. Cook for couple of minutes. Set aside to cool.

    In a bowl add 2 cups of flour and 1/2 teaspoon salt. Add in butter cubes and using your finger tip resembling bread crumbs. Sprinkle 1 tablespoon of cold water at a time while mixing. Gather dough in a ball and divide in half.

    Shape in 2 flattened rounds and cling film it. Refrigerate for 45 minutes. Dough should be firm and pliable.
    Preheat oven to 180 C.

    Remove the dough after 45 minutes and roll pastry round ( about 2 inches larger than upside down pie dish.
    Place the round pastry in the pie dish and press the edges firmly around the edges and bottom.

    Spoon into pastry-lined pie dish. Dot with butter. Trim overhanging edge of pastry.
    Roll other round of pastry. Place it on top over filling and trim overhanging edge.
    Using a fork press the edges and seal.
    With the left over dough you can make flower leaves etc using a cutter and press on top. Make indents with a fork so steam can escape.

    Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through indents in crust. Serve warm if desired with ice-cream, custard, fresh cream or own its own. Enjoy.
