Ingredients

  1. 2 racksbaby back pork ribs
  2. 2 cupsBourbon BBQ sauce
  3. Dry rubs
  4. Dry rub :
  5. 1/2 cupbrown sugar
  6. 1 tspchilli powder
  7. 1 tbsponion powder
  8. 1 tspkosher salt
  9. 1/4 tspground black pepper
  10. 1 tbspgarlic powder
  11. 1 tspcayenne pepper
  12. 1 tbsppaprika
  13. Bourbon BBQ Sauce:
  14. 1/4onion, cut into wedges
  15. 1 clovesgarlic, minced
  16. 1/2 cupbourbon whisky
  17. 1 cupketchup
  18. 2 tbsptomato puree
  19. 3 tbspcider vinegar
  20. 3 tbspWorcestershire sauce
  21. 1/8 cupbrown sugar
  22. 1/4 tspground black pepper
  23. 1/4 tbspsalt

Cooking Instructions

    Combine all dry rub ingredients in a small bowl. Sprinkle the dry rub liberally over the front and back of the rack and gently rub it in.

    For the best flavour, let the meat sit with the rub for at least 30 minutes, or you can cover and refrigerate it for up to 24 hours.

    Preheat the over to 160ºC.

    When ready to cook the meat, wrap the slabs in heavy duty aluminium foil in the place them on a baking sheet. Place them in the oven and cook for 1.5 hours or until the meat starts pulling away from the bone and is tender.

    When the pork is done, open the foil packet completely and brush on Bourbon BBQ Sauce.

    Turn up the heat to 180ºC and let the meat cook for an additional 30 minutes.

    Serve immediately with plenty of napkins.

    To make Bourbon BBQ Sauce:

    Add the onion, garlic and bourbon to a small saucepan. Simmer on low for 10 minutes until the bourbon reduces by half.

    Add all the remaining ingredients and stir well.

    Bring to the boil, then reduce to medium low and simmer for 20 minutes.

    Take the pan off the heat and allow to cool.

    After the sauce is cool, strain the sauce into a bowl. Use immediately or store in the refrigerator for up to 2 weeks.
