Ingredients

  1. 1 bunchlarge matoke
  2. 2large diced onions
  3. 4large diced tomatoes
  4. 1/2 teaspoonnutmeg
  5. 1/4 teaspoonCardamom
  6. 2chicken Royco cubes
  7. 1 1/2 cupswater
  8. 1 teaspoonsalt
  9. I tablespoon sugar
  10. 2 tablespoonsoil
  11. 1bell pepper, diced

Cooking Instructions

    Peel the bananas and keep them under water. Wash then dice them to your desired size. Drain the water and set aside

    In a pot, heat oil then add the onions. When translucent, add the bananas and stir until all the bananas are coated with the oil

    Add the tomatoes and stir.

    Add the spices, salt, sugar and stir. Let the tomatoes wilt then add the water. Lower the heat and cover allowing it to simmer for about 25 minutes.
    Keep checking it to ensure that it does not stick to the bottom of the pot

    Add the bell peppers and stir. Let it simmer for 5 minutes. Remove from the heat

    Serve as desired and enjoy
