Homemade Indian chicken curry

Ingredients

40 minutes
2-3 servings
  1. Oil
  2. 1/2Red onion
  3. 1Red pepper
  4. 1large Celery stick
  5. 1Diced Chicken breast
  6. 1/2 Tinchopped tomatoes
  7. 100 mlreduced fat coconut milk
  8. 1 tbspTomato puree
  9. 1 tbspmango chutney
  10. Coriander leaves garnish
  11. 6-8 ozrice
  12. Spice paste
  13. 3 tspgarlic granules
  14. 2 tspgaram masala
  15. 1 tspturmeric
  16. 100 mlwater
  17. 1.5 tspeach of cumin, hot paprika, chili powder, ginger

Cooking Instructions

    Mix spices and add water, stirring to form a paste.

    Saute onion until soft and pink, then add peppers and Celery. Cook for a further 2 minutes.

    Add the spice paste, stir well and cook for 2-4 minutes.

    Add the chicken, stir well, covering in the paste. Cook for 6-8 minutes, add chopped tomatoes, coconut milk

    Meanwhile, cook rice in a pan of boiling water to coincide with the end of step 6.

    Once chicken cooked add mango chutney and tomato puree. Cook for a further 25 minutes.

    Serve on a plate or bowl and garnish with coriander leaves.
