Ingredients

4 servings
  1. 2 poundsskinless halibut or cod fillets
  2. 1/2 cupgrated Parmesan cheese
  3. 1/4 cupbutter, softened
  4. 3 tablespoonsmayonnaise
  5. 2 tablespoonslemon juice
  6. 1/4 teaspoonsalt
  7. 1 dashhot pepper sauce (Tapatio)
  8. 3 tablespoonsscallions, chopped, with extra for garnish
  9. Lemon wedges for serving

Cooking Instructions

    Preheat broiler

    Mix together all of the ingredients

  3. 3

    Line a 10 x 15 inch baking pan with parchment paper or foil and spray with cooking spray. Arrange fish in a single layer on the pan

    Broil the fish until it flakes easily with a fork, about 6-8 minutes

  5. 5

    Spread the mixture on the fish and continue broiling until topping is bubbly and lightly browned, about 2 minutes

    Garnish with additional green onion and pepper. Serve with lemon wedges
