Creamy Garlic Mushroom Chicken

Combine Chicken Seasonings and season Chicken Thighs liberally on both sides. Prep all the Veg, Parmesan, and Herbs, set aside.

Heat Oil & Butter in a Deep Iron Skillet over Medium to Medium High heat. Add Seasoned Chicken, smooth side down, and Cook 3 - 6 Minutes on Each side, or until Well Browned and Cooked Through. Remove to a plate, and Cover to keep Warm. Don't overcrowd the pan, and cook in Batches, if necessary.

In the same Skillet, add the 1 Tbsp Oil and 2 Tbsp Butter. Add the Mushrooms, and cook for several Minutes until nicely Browned. Add Onions, and cook until they start to Soften. Salt and Pepper lightly. Add Minced Garlic, Rosemary, Thyme, Parsley, and Chives. Stir and cook for a few Minutes until Garlic is starting to Brown and Onions are nice and Soft.

Add Heavy Whipping Cream. Bring to a Simmer. Lower Heat slightly, and allow to Reduce and Thicken, about 5 - 10 Minutes. Stir in Parmesan, then add Chicken back into the Skillet. Cook for another few minutes, until Sauce is Thickened and Chicken is Hot. Taste for Seasoning, and add Salt and Pepper if needed.

Serve alone, or over Mashed Potatoes, Rice, or Pasta. Enjoy!
