And it's always a treat in Winters when fresh and variety of Vegetables are available aplenty all over the Country.
It's a wonderful Vegetable that's loved by the children too. And it's loved in every avatar of it. Be it deep fried or stir fried or baked or grilled or even done in a Microwave. It is always the best. Not to forget in Curries and Gravies too, it is absolutely delectable.

Ingredients

4-5 servings
  1. 500 gmLady's Finger or Okra or Bhindi
  2. 1 tspSalt
  3. 2-3 tbspOil
  4. 2Onions thinly sliced
  5. 2Tomatoes chopped
  6. 1 tspKashmiri Red Chilli powder
  7. 1/2 tspTurmeric powder
  8. 1 tspCoriander powder
  9. 1/2 tspCurry powder
  10. 1 tspGinger garlic paste
  11. 1small bunch chopped Coriander Leaves
  12. 2Green Chillies chopped

Cooking Instructions

30 minutes

    Wash and wipe the Okra dry with a clean kitchen towel. Then slice them all to a desired thickness. The sliced Okra looks great with it's beautiful flower like shape.

    Heat Oil in a kadai. Saute Onions, Green Chillies and the Ginger garlic paste until done on a low heat. Now add in the rest of the spices or the masalas along with the chopped Tomatoes. Mix well and cook until mushy and soft. And then finally add the sliced Okra or the Bhindi.

    Cover and cook until done. It does not take much time. Adjust Salt according to taste and garnish with some chopped Coriander Leaves before dishing it out. Enjoy!
