Ingredients

  1. 120 g (4.2 oz)unsalted butter, room temperature
  2. 60 g (2.1 oz)granulated sugar
  3. 40 g (1.4 oz)brown sugar powder
  4. 1egg (about 50g, 1.8 oz, without shell), room temperature
  5. 30 g (5 Tbsp)ground almonds
  6. 90 g (3.2 oz)cake flour, or all-purpose flour
  7. 1.5 g (1/4 tsp)baking powder
  8. 100 g (3.5 oz)oats
  9. 40 g (1.4 oz)chocolate chips
  10. 30 g (1 oz)chopped walnuts, roasted, unsalted
  11. 30 g (1 oz)raisins
  12. {Baking temperature and time}
  13. 170℃ / 338 F for 16 minutes
  14. Preheating; 190℃ / 374 F

    Preheat your oven to 190℃ / 374 F. Cream unsalted butter until smooth. Add granulated sugar in 2 parts, mix well each time. Add brown sugar in 2 parts, mix well each time.

    Use an electric mixer to beat on low speed for 2-3 minutes until whitish. Add the beaten egg in 3 parts and beat on low speed each time until smooth.

    Add ground almonds and use a spatula to mix until smooth while crushing lumps. Sift the cake flour and baking powder over the mixture, and fold it.

    Fold it until large lumps begin to form. Add oatmeal, chocolate chips, raisins, and chopped walnuts. Fold until you don’t see flour left.

    Use your hands to roll the dough into 3 cm / 1.2 inches balls (20g or 0.7 oz each) and press lightly to flatten. Arrange them on a baking sheet lined with parchment paper, keeping space (around 2 cm / 0.8-inch) between each other.

    Lower the oven to 170℃ / 338 F and bake for 16 minutes. Freshly baked is soft, so let it cool for about 15 minutes on the baking sheet. Then transfer to a rack and cool completely. Please store them in a closed container. Thank you!
