To begin with take a large bowl and mix all the dry ingredients together like besan, corn flour, coriander powder, and salt.

In the meantime, wash the veggies and rinse them in running water.

Then take a chopping board and finely chop the veggies like green chillies, potato, onions and coriander leaves.

Then add some water in the flour and make a smooth batter by gradually adding water. Then add veggies in the batter. Ensure that there are no lumps in the batter.

Take a fry pan and heat oil over medium flame, if the oil is too hot, pakoras will not be crispy.

Take spoonful of batter and slowly put in the frying pan. Fry the pakoras in small batches and turn them occasionally. Wait till both sides are golden-brown. Serve hot pakoras with dhania-pudina chutney or tomato sauce.
