Ingredients

  1. 1 cuproasted Semolina
  2. 3 tbspInstant Oats
  3. 1/2 cupCurd
  4. 1/2 tspSugar
  5. 1 inch grated Ginger
  6. As Per Taste Salt
  7. 1/2 tspBaking Soda
  8. as requiredWater
  9. 3 tbsproasted peanuts
  10. Sambhar
  11. 1/4 cupboiled Arhar Dal
  12. 1 tspMustard seeds
  13. 4 tbspTamarind pulp
  14. 3 tspSambhar Masala
  15. as required Chopped Carrot
  16. as requiredChopped Ash Gourd
  17. as requiredChopped Bottle Gourd
  18. as required Chopped Potato, Onion
  19. as requiredChopped Tomato
  20. as requiredChopped Pumpkin
  21. 3green chilli
  22. 1Curry leaves stick
  23. 1dry red chilli
  24. 1/2 tspturmeric powder
  25. as per required Water

Cooking Instructions

    In mixing bowl add semolina +oats + curd + salt + sugar + ginger + little water and give a nice mix. Keep rest for 15 minutes. Add water accordingly as it requires a thick yet dropping consistency batter. Add peanuts + baking soda at the end and give a gentle mix. Idli batter is ready.

    Grease Idli moulds, keep steamer ready, pour Idli batter in each mould and put inside steamer, steam for 8 - 10 minutes.

    Allow to cool and then de mould, Idli is ready.

    Assemble ingredients for Sambhar

    In moderately heated pan add oil, add mustard seeds + red chilli and allow to sizzle, then add curry leaves + onion + potato cubes + green chilli and sauté for 2 minutes

    Then add all veggies + salt and sauté for 3-4 minutes.

    Then add turmeric + 1 tsp Sambhar masala and stir fry 2 minutes, then add boiled Dal along with water and more water as per required gravy. Add 2 tsp Sambhar masala at this stage.

    Cook for 3-4 minutes, check for salt, simmer and cook till veggies turn soft. Sambhar is ready.

    Serve Idlis with hot hot Sambhar.
