Yummy Eggs on a spicy milk gravy where milk is the prime ingredient in the whole cooking.

Its a rich thick gravy egg curry which goes very well with parantha, naan, kulcha, pulao or fried rice.

Ingredients

  1. 4-5Eggs
  2. 2medium Onion
  3. 2green chilli
  4. 1 tbspGinger Garlic paste
  5. 1/2 cupcream / fresh malai
  6. 1.5 cupMilk
  7. 1/2 tspGaram Masala powder
  8. 1/2 tspblack pepper powder
  9. 1/2 tspSugar
  10. 8-10Cashews (soaked)
  11. Oil
  12. Salt

Cooking Instructions

    Assemble all ingredients, make paste of onion + green chilli and keep aside. Boil eggs and keep aside.

    In moderate heated pan add oil / butter, then add onion paste + 3 - 4 tbsp water and stir fry for 3-4 minutes. Then add ginger garlic paste + cashew paste and sauté for 3-4 minutes till rawness goes off under medium flame.

    Now lower flame and add milk and give a nice boil for 2-3 times but keep stirring as milk tends to burn quickly.

    Now add pepper powder + garam masala + salt, mix well and stir for 2 minutes.

    Now add boiled eggs, mix well and stir for 2-3 minutes. Now add cream / Malai, sugar, mix well and simmer for 2 -3 minutes. Lastly add finely chopped coriander, give a good mix and keep in stand by mode for 1-2 minutes.

    Garnish with coriander / tomato and serve.
