Salmon Soup with Fresh Vegetables 🐟 🌱

This recipe is inspired by the O.G. "Warung Padi" salmon soup in Bali. We tried to re-create it by memory as this was our favourite go-to lunch place back there. Also, tomato & courgette are in season right now and it just made the flavour even more tasty! Thanks @adhi & @rikarumi for helping to make this! #cooktheseason
Cooking Instructions

Season the salmon with 1/2 lime and salt, cut it into 4 pieces for each fillet. Let it rest.

Chop the vegetables: chili, courgette, big chili, and potato (peel it beforehand) to cube pieces. Mince the rest of the ingredients to small pieces.

Saute onions, garlic, and ginger with vegetable oil with medium-high heat until fragrant. Then add 3 cups of water and wait until it boils.

Add potato to the soup, then add salt, nutmeg, white pepper, cumin, and sugar. Wait until potato start to be more tender, around 6-7 minutes.

Add the chopped vegetables to the soup. Squeeze in the rest of the limes. Lightly stir for 2-3 minutes.

Finally, add salmon & parsley to the soup, stir lightly and wait until the salmon is cooked. You can adjust the seasoning to your liking (e.g. add more salt, more sugar, more lime, etc.)

Serve in a bowl, enjoy! This is best paired with rice on the side.
