Imitation Crab, Shio Koji Japanese Cucumber Salad

Ingredients

overnight
4-5 servings
  1. 3Japanese cucumbers sliced very thinly
  2. 250 gmImitation crab, shredded roughly
  3. 2 tablespoonsCupie Mayo
  4. 1.5 teaspoonsrice vinegar
  5. 1 teaspoonsesame seeds
  6. Optional- few home fermented carrots/veg, chopped finely
  7. Few chopped chives on top
  8. 2 tablespoonsshio koji
  9. 1 teaspoonyuzu kosho

Cooking Instructions

overnight
  1. 1

    Mix well: sliced cucumber and shio koji. Press overnight. Next day squeeze liquid out of cucumber but do not rinse..

    Add shredded crab to cucumber. Mix well.

  3. 3

    Add rest of ingredients except chives. Mix well and serve topped with chopped chives.
