This Gajar Mooli Matar Sabzi is a steamed and sautéed dry preparation of winter special Carrot Radish Green Peas .This flavourful sabzi is quite colorful. Cooking Instructions

Peel and slice carrot and radish into 2 inch semi thick strips.Parboil or microwave separately carrot and radish for 3 minutes.Parboil green peas for 2 minutes.Slit the green chillies into thin 1 inch long strips diagonally and deseed.Heat mustard oil in a pan.Reduce flame and sprinkle cumin and mustard seeds.When they splutter,add minced garlic.Saute till aromatic and add onion and fry till translucent.Add pinch of asafoetida and toss.

Add the slit green chillies, carrot,radish,green peas and chopped tomato.Sprinkle salt to taste.Add ginger garlic paste,coriander and roasted cumin powder, Kashmiri red chilli powder.Saute and stir cook in medium flame.Sprinkle the juices released during microwaving the vegetables or drizzle some of the stock when parboiling them.Cook till vegetables are soft but should not lose their crunch.Sprinkle lemon juice, garam masala and chopped coriander. Toss to combine all.

Garnish with chopped coriander and 1 fried dry red chilli.Serve hot healthy and nutritious Gajar Mooli Matar Sabzi with roti, paratha or as a side with dal and rice in lunch or dinner.
