This is a typical winter delicacy, a very popular side dish at breakfast made across North India when fresh peas are in season. It's a healthy, filling and delicious snack option too that can be eaten in-between meals.

Heat ghee in a pressure cooker, Add the asafoetida, cumin seeds, ginger and green chillies, allow this to crackle, then add the turmeric powder, mix.

Immediately add the peas, amchoor powder, salt and sugar, mix well.

Add 4-5 tablespoons of water, just enough to pressure cook the peas. Cook till the big whistle, simmer and cook upto 1-2 whistles. Take off heat.

When the pressure comes off, check to see if the water has dried up, if not, cook uncovered till it does or simply drain the excess water, reserving it to add to dals or curries.

Add the lemon juice and garnish with the coriander leaves on top. Serve hot.
