Miso glazed air fryer chicken drumsticks

Here I served my drumsticks over egg noodles dressed with a little soy and a touch of sesame oil. Sticky rice also works well.
Cooking Instructions

First turn on your air fryer to preheat to 170C / 340F (mine takes a couple of minutes) while you prep the glaze.

Grate or finely chop the ginger and add to a bowl or tub (large enough to hold all the chicken)

Finely chop the chilli and add to the bowl.

Add the remaining glaze ingredients to the bowl and mix well.

Add the chicken drumsticks and cover well with the glaze. If you have time store them in the fridge for 30 minutes or more (maybe even overnight!). It’s good to cover them so the ginger smell doesn’t invade your fridge!

Once the air fryer is heated up, add the drumsticks to cook for 18 minutes.
Don’t throw away the bowl with leftover glaze - you should spoon a little onto your chicken once or twice during cooking.
Turn the chicken after 9 or 10 minutes to ensure an even cook.

Serve and top with a few sliced spring onions.

I stir-fried them in a sweet-salty miso sauce to go well with rice.Season the chicken breast as described to prevent it from getting dry and stringy. I want to serve well-seasoned stewed dishes to my family that'll go well with a bowl of white rice. But I also want to cut down on the amount of salt used. So the sesame oil and ground sesame seeds adds flavor even with a light seasoning.The burdock should be slightly firm after cooking. If you prefer the burdock to be softened more, cook for a little longer at Step 4.
