Soy Milk Miso Noodle Sauce for Somen & Udon Noodles

I am too busy taking care of my newborn, so most of my lunch tends to be somen noodles, which is easy to prepare.
I got tired of the usual mentsuyu sauce, so I prepared this with soy milk and ingredients in my pantry.
If you eat with only the basic sauce, it's better to add more miso and soy sauce.
The recipe calls for a little less than one serving. Double the recipe if you want lots of sauce or serving to more people. Recipe by Ayapuchi

Cooking Instructions

Combine the ☆ ingredients into a bowl and mix well. Add the soy milk gradually, dissolve in the miso, and add the rest of soy milk. After mixing well, pour the vinegar and dried bonito flakes.

This basic sauce is delicious as it is, but here are some other ideas.

Add a spoonful of chunky ra-yu for spice and crunch.

Mix yuzu pepper paste and sesame seeds with the ☆ ingredients for a fiery and herbal kick.

Or add minced umeboshi and bonito flakes for a tart and refreshing broth.

I added julienned pickled spring ginger.
