Easy one pan bacon fried rice

Pretty quick, good and easy
This assumes you have the rice cooked already. Like left over. It has a good fried rice flavor, and makes a decent meal. The pictures i am making a double batch, left overs from a rice bowl recipe the prior night.
Bacon can be optional.
Cooking Instructions
- 1
Chop bacon into about 1/2 inch pieces
- 2
Heat wok, stir-fry pan or skillet over medium heat.
- 3
Add bacon to pan, stir and cook until almost done. Or if not using bacon, add oil and heat.
- 4
Add onion to pan, cook until tender, but try not to brown it.
- 5
Add hot sauce and stir it in if using.
- 6
Add frozen peas and carrots, stir until not frozen and half cooked. Add water chestnuts if using, stir 1 minute.
- 7
Add rice, stir for a minute, add soy sauce.
- 8
Add peanuts and bean sprouts. Stir for a couple minutes.
- 9
Make a hollow place in the center of the mix.
- 10
Add the eggs to this hollow you made.
- 11
Scramble eggs until mostly done.
- 12
Mix eggs into the rest of the rice mixture. Turn heat to medium-low. Stir for about 2 minutes to make sure all is hot.
- 13
Serve.

Had some old rice in the fridge. I will share this simple recipe with bacon in it, but what you see in the picture is pork belly. Because I had a small piece of pork belly with a little too much fat in it and I don’t want to waste it. 2choi -

3 years ago my daughter and I took a trip to South Korea 🇰🇷 We spent a lot of time tasting different kinds of ‘street food’. Bacon Kimchi Fried Rice was one of our favorite ones. The sourness of the kimchi combined with the crispy bacon is just perfect! 😋#heirloomIf you like my recipes, please follow my Instagram @jenscookingdiary @jenscookdineandtravel jenscookingdiary -

One of those makedowithwhatchagot meals (and pretty stinkin' tasty if I do say so myself!). ;)Slightly dry rice makes better fried rice, so you can either use some leftover rice from another day (or from takeout), or if you're going to make fresh rice, just use slightly less water than usual and spread it out on a sheet pan to let it cool while you're prepping your ingredients. x -
