Cooking Instructions
- 1
In a mixing bowl combine warm water, yeast & sugar. Mix and let sit covered with a thin towel for 5 minutes. (The mixture will become foamy)
- 2
Add in flour & salt. Mix until combined (you might need to add a few splashes of water if needed) to get the dough to come together. Cover and let dough rise for an hour.
- 3
Pour some cornmeal on a baking sheet and flour your surface..do not use parchment paper like I did just flour your cleaned counter!!
- 4
Pour your dough onto floured surface & sprinkle a little more flour so it doesn’t stick. Gently press into a circle and cut 8-12 segments. (I did 8)
- 5
Gently form each segment into a ball and place on prepared baking sheet (the cornmeal prevents sticking). Repeat process with all segments. Cover with towel and let rise 25-30 minutes.
- 6
Preheat oven to 350. Heat a pan over medium heat (I buttered the pan but you don’t have to). Place balls on skillet and heat 4-5 minutes per side. Repeat until finished.
- 7
Place on a clean baking sheet or baking dish & cook in oven 10-15 minutes!

This is a classic American bread, often used for breakfast. These muffins are excellent for breakfast with butter, jam, eggs, and ham.I use instant yeast, which can be mixed directly with the other ingredients. I wanted to get closer to the taste and texture of real Pasco brand muffins that I did with my previous recipe. If you use rice flour, it will make them even more chewy. When they're freshly baked, you can make them look more like authentic Paso muffins by cutting into them 5 mm deep all the way 'round and then pulling them apart with your hands! We make marmelades, jams, lemon butters and need a muffin to fill its nooks and crannies. We also need muffins to make delicious Eggs Benedict with canadian bacon, and Eggs Royale with cured lox salmon instead of bacon. This recipe makes eight muffins, they freeze well. They are supposed to be round, but ours come out square. Hobby Horseman
