Spring onion sev curry /sev dungri nu shak is made with spring onions with a strong flavor of Garlic.. It is a simple curry recipe in which gathiya /sev are added, giving the crunch to the sabzi. It is served with any Indian flatbread or moongdal khichdi.

Ingredients

  1. 250 gramsSpring onion
  2. 1 bowlthick sev /gathiya
  3. 3 tablespoonsoil
  4. 1/2 teaspoonmustard, cumin seeds
  5. 1 pinchasafoetida
  6. 5 clovesgarlic crushed
  7. 1tomato chopped
  8. 1/2 teaspoonturmeric
  9. 1 teaspoonchili powder
  10. 1/2 teaspooncoriander
  11. Salt to taste
  12. 1 cupwarm water
  13. Chopped coriander as required
  14. 1 teaspoongreen onion leaves

    First of all, wash and clean the spring onion, tomato and chop it. Crush the garlic. I have taken thick sev (homemade). Heat oil in a pan and add mustard, cumin seeds. Allow to crack it. and add asafoetida and garlic. Saute for few seconds.

    Now add spring onion to it and mix it well, then add tomato and all the spices and let it cook. After everything cooks, add 1 cup of water and let it cook for 2 minutes.

    Now add sev to it, the sev has thickened, so after 1-2 minutes it becomes soft, add coriander and take it off. The spring onion sev vegetable is ready. Garnish with coriander and spring onion leaves.
