Grilled Chicken and Plantain

When you don't have enough Vegetable oil to fry your plantain; you resolve to grilling to get the same taste of what you wish to achieve.
Very Healthy as well; this can be added to a weight watcher food time table.

Please note that it will take you about 30mins to prepare this dish aside marinate time; you can marinate over night or more.

Ingredients

  1. 2kilo Chicken
  2. 3finger Plantain
  3. 6fresh Habanero Pepper
  4. 1bulb Onions
  5. 1 tspOregano
  6. 4 clovesgarlic
  7. 1 tbspginger crushed
  8. to tastesalt
  9. 4boulion cube
  10. 1/2 tspparsley
  11. 1/2 tspbasil leaf

Cooking Instructions

    Pre heat oven to 220degree

  2. 2

    Wash chicken add salt, oregano, parsley and basil leaf; mix it in and set aside

  3. 3

    Peel Plantain, cut to your desired shape and toss salt; mix together and set aside

    In a blender add pepper, onions, garlic, ginger and boullion cube and blend

  5. 5

    Pour blended mix into the chicken and mix in; Marinate for about an hour or more if you wish.

    Arrange chicken and plantain in an oven tray and grill for about 25 mins

  7. 7

    Inbetween that 25mins you will have to check both the plantain and chicken to flip over.

    Once its done serve with any pepper sauce/dip of your choice
