Coconut Macaroons!

Repeat after me! Macarons are not Macaroons! Its actually a common mistake, if you know the difference, give yourself a pat on the back! Macarons are colourful are bright, very hard to make I may add, Macaroons are easy, coconut biscuits that are delicious equally to Macarons! I have an easy recipe that is gluten free! Cooking Instructions

Line a tray with baking paper, preheat the oven on 150°

In a bowl, add egg whites, sugar, salt, vanilla and almond if using.

Beat the ingredients together until you get a frothy mixture. Should be about 2-3 minutes! Don't over mix.

Add the Coconut to the egg white mix. Stir until combined!

With a small ice cream Scoop or two tablespoons, Scoop the mixture into small balls. Place them on the tray a few cm apart

Bake for 20-25 minutes, they should be golden brown.

You may leave them plain or dip the bottom in chocolate. Both are delicious 😋

My neighbor who's a great cook, taught me this recipe. She uses 6 egg yolks for her cookie recipe, so she usually makes twice the amount of this recipe. For German Christmas pastries, I prefer simple cookies to Stollen (since I feel it doesn't know if it wants to be a bread or a pastry).You can use hazelnut flour instead of almond powder.
