Lorna’s Scones

Lorna is one of my husband’s great-aunties, his grandfather Theo’s young sister. My husband lived with her and her husband Ern when he was at Uni. They were lovely people. They say Lorna was a good baker.
Many years ago, when I wanted to bake Scones for the first time, she gave me her recipe. It was a very simple one. Following her instructions, I have never failed to make high risen scones ever since. I have tasted many Scones at different occasions but I love Lorna’s Scones the best.

Cooking Instructions
- 1
You need a hot oven. Preheat oven to 220℃. Line a baking tray with baking paper.
- 2
Place Flour and Sugar in a large bowl. Cut the Butter into small cubes and add to the flour mixture. Now you’d better cool your hands if your hands are warm. Using fingertips, rub the Butter pieces into flour mixture until mixture resembles breadcrumbs. Do not over do it.
- 3
Add Milk and stir until a sticky dough forms. Knead gently until just combined and smooth.
- 4
Using your palm (I have never used a rolling pin for scones), gently flatten the dough to 2cm thick. Using a round cutter or a drinking glass which I use always, cut out scones. (My drinking glass is 7cm in diameter and I made 12 scones.)
- 5
Place scones on the prepared tray. Bake for 12 to 15 minutes or until golden and hollow when tapped on top.
- 6
Serve with jam and cream. Or you can enjoy them with ‘Tsubu-an (Sweet Red Bean Paste)’ and cream OR Sour Cream.

Pan-Baked Castella from Guri & Gura Pan-Baked Castella from Guri & Gura
I loved the picture book "Guri and Gura" when I was a kid. Now I have a daughter of my own who's almost three years old... When I decided to buy her this picture book, I wanted to try making the castella they make in the book. My daughter loves to eat and I'm sure she'll love both the cake and the picture book.According to the daughter of Mrs. Yamawaki, who illustrated the picture book "Guri and Gura," the castella cooked in a pan should puff up, just like it did in the story. And it's true -- the one we made puffed up pretty evenly. Of course, if you use a shallow pan or one with a low lid, the castella will stick to the underside of the lid. I recommend using a wok! For the size of a frying pan. Recipe by Mimi-nee cookpad.japan -
Unforgettable Scones Unforgettable Scones
A long time ago a café near where I worked had these delicious scones. I'd eat them, and then everyday at home try various ingredients to make this. This is the result of various attempts. If you leave all the ingredients in the refrigerator and let them cool, it'll bake very nicely. We only have an electric oven at home so it's not possible, but if you have a gas oven you can get close to those unforgettable scones. If you make these with a gas oven, please let me know. Recipe by Mahha mama cookpad.japan -

Earl Grey Scones for the airfryer Earl Grey Scones for the airfryer
I was searching the internet one day and found this recipe. Converted it to ml and my family loved it. There is nothing I love more than to eat scones in the summer. But no one likes to heat up the home. I love my airfryer for this reason. I also have a confession sometimes I mess up the butter measurements and add way more than I should. Like 1 cup instead of half. What can I say, I am not a chef or a baker and found adding more butter was actually tastier and moister scone. Oopsy baking everyone. Katatonickat -

Scones Scones
The scones I had at a café were just too delicious that I became addicted. Since I like a simple taste that goes with jam and cream, I made these soft and fluffy with no sweetness.I used a half-amount of chocolate chips, 30 g. Jam tablets are also delicious.I use good flour when making scones. This time I used dolce.I think they're best when warm, so if they cool, please heat them in a microwave or toaster oven before eating. Recipe by nyonta cookpad.japan -
