This recipe was originally given to me by my mother's friend after I had lots of mincemeat left at Christmas and was sick of mince pies. I changed the original recipe around in order to make it a lighter fruit cake. I hope you enjoy :-)

Ingredients

16 servings
  1. 115 gramsbutter
  2. 115 gramscaster sugar (regular white sugar)
  3. 3 eacheggs
  4. 340 gramsmincemeat (the kind you get at Christmas in jars. its not meat but a mixture of currants cherries suet etc)
  5. 200 gramsself raising flour
  6. 1 dashmilk

    Grease a 7inch round cake tin

  2. 2

    Cream butter and sugar together (ie beat together until it looks light)

  3. 3

    Beat in eggs to the sugar and butter mix. Beat in one at a time until combined

  4. 4

    Stir in the mincemeat and fold in the flour. The mixture should be moist and not too stiff add a little milk if necessary

  5. 5

    Bake at 325°F for 10 minutes then lower to 300°F for 30-40 minutes the cake is ready when it shrinks from the sides of the pan

  6. 6

    Make a coffee sit with your feet up and enjoy a slice :-)
