Ingredients

8 servings
  1. 1 lbsplit peas
  2. 1med. onion (diced)
  3. 3-5carrots (diced)
  4. 2-4 stalkscelery (chopped)
  5. 2-4potatoes (diced)
  6. 2-4 clovesgarlic (finely chopped)
  7. 1 canchicken stock
  8. 2-3 cupswater
  9. salt&pepper

Cooking Instructions

  1. 1

    Throw everything in to the Crock-Pot. (Ran out of onion, used 3-4 tbs onion powder instead)

  2. 2

    Tips: *For vegan, substitute chicken broth with all water *For more chicken flavor omit water for all broth *Add cooked cubed ham or cooked chopped bacon for more meatiness

  3. 3

    High 4-5 hours. Low: 6-8. Depending on Crock-Pot.

  4. 4

    Ready when soup is creamy.

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
