Spaghetti with Fresh Coriander (cilantro)

Fresh coriander is one of those ingredients that seems to provoke extreme reaction - love or hate. I think it's a wonderful herb and adds real character to a dish, but I have to go carefully at home because my family are reluctant converts (I usually have a little bowl next to my place at the table so I can add extra to my serving :-) ) This is a simple pasta recipe with cilantro.

Ingredients

  1. 1 packetspaghetti
  2. 2roasted peppers
  3. 2roasted onions
  4. 1 slicesmoked salmon
  5. 1 bunchfresh coriander
  6. 50 gr.grated parmesan (optional)
  7. 1lemon
  8. 1bay leaf
  9. 1 sloshsoy sauce
  10. Salt and pepper

    Slice the roasted peppers and onions and put in a bowl. Wash and cut up the bunch of fresh coroandor. Cut the smoked salmon in to tiny strips (it isn't the main flavour in this dish and it needs to know that). Squeeze a lemon over these ingredients and ...

    Make the pasta according to the instructions o the packet. I like to add a bayleaf to the boiling water and also a pinch of salt

    When the pasta is ready, drain, put back in to the pan, and add the other ingredients

    Mix, add the soy sauce and put into a serving dish. Keep warm if you aren't going to eat straight away. Otherwise, add a few extra coriander leaves as decoration, grind some black pepper and serve. Enjoy!

I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible. However sometimes, when I do have more time, I like to spend a few hours making more time-consuming recipes and filling my kitchen with delicious smells and great music.
