Ingredients

  1. 400 gchicken breasts
  2. 200 gspinach
  3. 400 gchickpeas (drained)
  4. 3tomatoes
  5. 1 inchginger
  6. 1 clovegarlic
  7. 1red onion
  8. 2peppers
  9. 1table spoon curry powder (Tandoori Masala)
  10. 2red chillis
  11. 250 gGreek style yogurt
  12. 100 mlchicken stock
  13. Squeezelemon juice
  14. 200 gRice
  15. Handfulcashew nuts

Cooking Instructions

  1. 1

    Cook rice as per packet instructions 🍚

    Chop tomatoes, ginger and garlic and chilli

  3. 3

    Place in the blender with yoghurt and Tandoori masala. Blend.

    Stir paste until the sauce thickens. The longer you reduce it the more flavour you get in!

    Chop the peppers and onions

  6. 6

    Stir peppers onions and chicken in the sauce until chicken is cooked 🍗

    Add chickpeas and stock and continue to stir for five minutes

    Finally stir in the spinach 🌿

    Drain the rice and season with pepper and lemon juice

  10. 10

    Crush cashews in a pestle and mortal

  11. 11

    Serve topped with a teaspoon of yogurt and crushed cashews. Enjoy 😊
