Cooking Instructions

Preheat oven to 180°C/350°F.

Line a muffin tray with muffin cases.

Cream the butter and sugar until the mix is pale and smooth.

Add the eggs, one at a time.
- 5
Combine the two flours in a seperate bowl.
- 6
Put the milk in a jug and add the vanilla.
- 7
Add 1/3 of the flours and 1/3 of the milk-vanilla mix and beat well, repeat twice more.

Fill all the muffin cases with the mixture.

Bake in the preheated oven for 25 minutes until raised and golden-brown.

Transfer to a wire rack to cool.

VARIATION!!!! If you like, you can replace the vanilla with lemon essence!!! Taste the batter and if it gives of a good, strong lemon flavour you can bake as normal!!

Out of all the cupcakes I've made, this has become my go-to recipe.Since there's a lot of milk, the batter is quite soft. You can store leftover buttercream in the fridge. It will harden, but if you leave it out at room temperature before use, you can use it a second time. But anyway, be sure to beat veryyyyy well until the batter becomes light and creamy.
