preheat oven to 200 C ,wash potatoes leaving skin on ,cut into wedges,place into sauce pan of cold water and simmer gently for about 8-10 minutes. drain and pat dry.

mix oil ,garlic,spices ,herbs and salt in roasting tin,add the slighty softened wedges and cover thoroughly with oil mixture,roast for about 15 minutes or until crisp, drizzle with a little lemon juicy, cook for a further 5-10 ,turning occasionally.

We always say thank God in good times and bad. We are all going through tough and difficult times, but what can we do? We say thank God and we have to keep going for the people in our lives who also have rights over us. This year has been very hard on us; we lost 6 close family members in these two months and I had to cancel my daughter's wedding for them. The hardest part is that my daughter traveled, and since then, believe me, none of us at home have been able to sleep or enjoy food, but we still say thank God. This is a test from God to see how patient we are with these circumstances. We always thank Him for everything. We are still much better off than our families in Palestine who are being martyred without guilt and are besieged without food, medicine, or safety.
