Ingredients

  1. 1leg of Pork. ... mine was about 7lb in weight
  2. 1A little salt
  3. 1very sharp knife

Cooking Instructions

  1. 1

    pre-heat oven to gas 8 .. electric is 220

  2. 2

    over a meat board...score the fat on top of the joint of pork

  3. 3

    you do this scoring ...slicing into the fat with long lines very close together and then slice opposite direction so it looks like zigzag on the fat. be careful not to slice into the meat. your butcher will score this for you if you ask.

    you then rub a little salt into the fat that's scored

  5. 5

    place in the middle oven covered with lid or foil

  6. 6

    After 20 to 30 mins. Turn oven down to gas 4 or electric 160

  7. 7

    cook pork for 20 mins per pound and another 20 mins on top of that. check that juices run clear when cooked

    when cooked...leave to cool on a meat tray. or plate and after 20. mins take your sharp knife and gently slice the crackling off. .. keep meat juices for gravy

  9. 9

    always ensure your knife has been washed before doing this

  10. 10

    you can then slice the pork and serve with roast potatoes, veg and gravy made from meat juices and a little apple sauce on the side

Hi. my name is Sandy and I live in the south east of England, one of the warmer areas lol and I am orignaly from London. I have been happily married for 20 yrs with two teenage children. I have a 1 boy and 1 girl. my son had mild aspergers syndrome and I've also been a foster carer over the yrs. As well as having my own resturant for a long while too, sadly having to give it up due to becoming seriously ill, I have also travelled to America a lot over the yrs with my family. I have never been to Europe though, only Holland when I was younger. I am now 38 but I grew up in a tradtionsl English pub, after my father left working on the Thames as a lightman/ waterman. I have always loved to cook, whether it be tradtional English food or something different and love to experiment with cooking and enjoy knowing that it's enjoyed. I often do outside catering. but obviously not so much, now I don't have my resturant. but whatever, I love to cook and still love to learn or make new recipes everyday.I love to make new friends and am so glad to have found this wonderful app. Happy cooking and I look forward to getting to know some of you xx
