Braised Pork Leg (Kha Moo)
This recipe doesn't use dark soy sauce. The pork leg is tender and melts in your mouth. It's not difficult to make, but it does take time. Once finished, let it sit overnight and reheat in the morning for even better flavor.

This recipe doesn't use dark soy sauce. The pork leg is tender and melts in your mouth. It's not difficult to make, but it does take time. Once finished, let it sit overnight and reheat in the morning for even better flavor.

Toast the cinnamon, star anise, galangal, garlic, peppercorns, and cilantro roots until fragrant (see picture 1). Then, place them in the pot prepared for braising (see picture 2).

Next, add the palm sugar to a pan with a little water (see picture 1).
Caramelize the sugar until it turns a dark brown color (see picture 2; it can be darker than shown, but not too dark to avoid bitterness; use medium heat).
Once the desired color is reached, add a little water. The sugar will harden initially, but will dissolve into a liquid after a short while (see picture 3). Then, pour the sugar into the braising pot.

Clean the pan thoroughly, then heat it up. Sear the pork leg until fragrant and slightly charred (see picture). Then, place it in the braising pot.

Once everything is in the braising pot, including the shiitake mushrooms, add water. When the water boils, skim off the white foam. Season with soy sauce and salt to taste. Let the water boil vigorously for 10 minutes, then cover and reduce to the lowest heat. Braise for 2.5 to 3 hours, depending on your preference.

In the last hour, add the hard-boiled eggs, cover, and continue braising until the desired tenderness is achieved. The color comes from caramelizing the sugar and adding soy sauce.
Note: If you don't want to caramelize the sugar, you can skip this step and use dark soy sauce instead.

For the pork leg dipping sauce:
Blend the red chili peppers, garlic, vinegar, sugar, salt, and warm water until smooth. Adjust the taste to your liking.
